Oh, so yummy: 50% milk chocolate filled with a crunchy cookie-almond praline layer and a soft cheesecake ganache made with quark (aka farmer’s cheese), white chocolate, almond praline, yogurt couverture, a splash of lemon, and a hint of vanilla. Between the two layers, a whisper-thin blueberry couverture is painted on, made from real blueberries that still stain blue.
TIP: HOW TO ENJOY CHOCOLATE
Chocolate, like red wine, must be at room temperature to develop a full aroma. In order to taste the entire flavor spectrum of our hand-scooped chocolates, we suggest that you delight dark chocolate at 77 °F, milk chocolate at 72 °F and suggest that you delight in white chocolate 68 °F.
