Why is soy a common ingredient in chocolate?

As an emulsifier, soy lecithin helps to blend fats into chocolate bars for a silky smooth texture. Unfortunately, there are not many organic alternatives to soy lecithin available, so Zotter Chocolate does continue to utilize soy lecithin as a common ingredient in our chocolate bars. However, it is not in every variety. 

Which varieties of chocolate don’t contain soy?

Because dark chocolate has a lower fat content due to the absence of milk and a lower concentration of cocoa butter, our solid dark chocolates are soy-free. Soy lecithin is only used in milk chocolates with 40% cocoa content or less. Therefore, you’ll find a large selection of Hand-Scooped Chocolates, Labooko Pure Chocolate Bars, and Classic Chocolate Bars that do not feature soy as an ingredient.
