What Is Soy Lecithin?

Soy lecithin is used as an emulsifier to hold all the ingredients in a chocolate bar together. It’s also an important part of achieving the right texture. 

Soy Lecithin Substitutes

Cocoa butter, egg yolks, and sunflower lecithin are three popular substitutes for soy lecithin. There are also lots of delicious chocolate bars made without any soy lecithin or substitutes.

Our Soy-Free Chocolate Bars

We would love to use sunflower lecithin for our soy-free chocolates, but unfortunately, we found it challenging to get large amounts of it in organic quality. Using organic ingredients is very important to us, so we figured out ways to make soy-free chocolate without using sunflower lecithin. (That being said, we’re hoping it won’t be long before we can obtain large quantities of organic sunflower lecithin for our soy-free chocolates!)

We typically don’t use more than 0.5% of soy lecithin for our individual chocolates. If you’re looking for chocolate with less soy than that, we don’t use any soy lecithin in our milk chocolates that have 40% cocoa content or higher. There’s also no soy lecithin in our solid dark chocolates. 

If you want to be certain that no soy lecithin has been used, make sure to check the ingredients list of the specific chocolate bar you’re interested in.
